Located in Jiayi's Shanyangzi Beautiful Food Base, "初物鐵板燒鍋物" is expected to open in May 2024. This will be Jiayi's first Fine Dining restaurant, featuring top-notch teppanyaki art cuisine. Led by Chef 毛乃康, the restaurant selects live seafood and local ingredients, combining Japanese, French, and Taiwanese culinary techniques to showcase the original flavors of the ingredients. A new menu is set to launch in Spring 2025, bringing dining surprises to guests. The restaurant dining space is divided into two levels: the first floor offers hot pot, while the second floor focuses on teppanyaki, creating a comfortable and elegant dining atmosphere.
Located in the 嘉義山樣子美食基地園區, "初物鐵板燒鍋物" is set to open in May 2024 and will become the first Fine Dining restaurant in 嘉義, focusing on premium teppanyaki artistry. Led by emerging chef 毛乃康 and a young culinary team, the teppanyaki dishes here use top-quality live seafood and local ingredients, blending Japanese, French, and Taiwanese cooking techniques to showcase the purest flavors and textures of the ingredients through exquisite craftsmanship. A brand new menu is scheduled to launch in spring 2025, with regular updates to surprise both gourmets and new diners.
The menu at 初物鐵板燒 features spring ingredients such as Australian water bamboo, live abalone, white asparagus, and white pomfret, offering a seasonal international dining experience that brings wonderful memories of spring.
Chef 毛乃康 will showcase his unique insights on Japanese and French cuisine, interpreting Michelin-level teppanyaki while returning to the essence of the ingredients. From the decor to the utensils, each detail reflects the purity of the ingredients.
初物 Spring 2025 Menu
- Lunch Chef’s Recommended Appetizer: Inspired by fresh ingredients of the day, the dish changes daily to surprise diners.
- Soup: White Pomfret Rice Noodle Soup, combining memories from the chef’s early career, with a homemade clear broth.
- Hot Appetizer: Charcoal-Grilled Chicken Wings, using locally sourced chicken from 嘉義, paired with homemade corn chicken liver sauce.
- Seafood: Abalone Grilled in Bamboo Leaves, using 月桃葉 from Nantou paired with homemade green pepper miso sauce.
- Rice: Firefly Squid and Kyoto Mizuna Rice, cooked with clam broth, paired with the slight bitterness of firefly squid and mizuna.
- Dessert: Tiramisu, paired with coffee liqueur made from 古坑 coffee and whiskey.
The dinner appetizers include Japanese Sweet Shrimp Tartare paired with Cheese Dorayaki, with seasonal vegetables and grilled New Zealand Lamb Saddle as recommended hot appetizers.
- Soup: Cream of Cauliflower Soup, paired with Hokkaido Scallops and crispy cheese biscuits.
- Main Course: Seafood Australian Water Bamboo Maccheroni, served with tomato chili sauce.
- Pre-meal Drink: Pineapple Beer Slush, made from fresh pineapple and beer.
