"Initial Iron Plate Grill" will open in Chiayi in May 2024, becoming the first Fine Dining restaurant in the area, featuring top-tier iron plate artistic cuisine. Led by emerging chef 毛乃康 and a young team, it combines live seafood with local ingredients, cleverly merging Japanese, French, and Taiwanese cooking methods. The new menu will debut in the spring of 2025 and will be regularly updated, bringing new surprises to diners. The restaurant is two stories high, with an elegant environment suitable for family gatherings and business meetings.
Located in the Jiayi Shanyingzi Gourmet Base Park, "Chuwu Teppanyaki Hot Pot" will officially open in May 2024, becoming Jiayi's first Fine Dining restaurant. The restaurant specializes in upscale teppanyaki artistic cuisine, led by a rising star chef, combining unique cooking techniques from Japanese, French, and Taiwanese flavors, using fresh live seafood and local ingredients to showcase the original taste of the ingredients with exquisite cooking skills. In the spring menu of "Chuwu Teppanyaki Hot Pot", there are seasonal ingredients like Australian water girls, live abalone, white asparagus, and white pomfret, presenting guests with a seasonal exotic culinary feast.
The chef draws inspiration from the fresh ingredients of the day, with appetizer small plates changing daily, ensuring that loyal customers feel freshness in each dining experience. The soup, white pomfret rice noodle soup, is inspired by the chef's upbringing, simmered with homemade broth, resulting in a clear and sweet flavor. The hot appetizer, charcoal-grilled chicken wings, uses local meat chickens from Jiayi, restoring the chicken's growing environment during the cooking process, making the texture more tender.
Seafood dishes like abalone grilled with bamboo leaves use the ginger lily leaves from Nantou, further enhancing the special aroma of the dish. As for rice dishes, the spring firefly squid Kyoto water vegetable rice is cooked with clam broth and paired with charcoal-grilled firefly squid, making every bite of rice full of surprises.
For dessert, the chef creates a tiramisu themed around Gukeng coffee, combining whiskey and rum to present a unique coffee and liquor aroma with distinct layers of texture.
The dining space is divided into two levels; the first floor offers an open hot pot experience, allowing customers to enjoy a comfortable dining environment. The second floor focuses on upscale teppanyaki artistic cuisine, featuring large floor-to-ceiling windows that let natural light in, creating an elegant atmosphere.
The restaurant's philosophy is "returning to the essence of ingredients," and the chef is committed to providing the most authentic ingredient experience, viewing teppanyaki cooking as an art form, allowing customers to participate in the cooking process and share in the charm of the cuisine.
Chuwu Teppanyaki Hot Pot will celebrate its first anniversary in 2025. To express gratitude for the continuous support, a special "Annual Welcome Dish" will be launched, recreating classic flavors and reminiscing with customers about past delicious memories.
