Chef Allen, the acclaimed two-star Michelin chef from Restaurant Allen in Seoul, has been invited to the Han Gyu Hotel to host a limited-time guest dinner at the BeGood restaurant from July 18 to 20. This exclusive event will feature only four dining sessions, spotlighting new interpretations of Taiwanese seasonal ingredients and showcasing a unique aesthetic of contemporary Korean cuisine. Reservations are now open!

Chef Allen specializes in using fresh, seasonal ingredients and blends modern French cooking techniques to create remarkable seasonal dining experiences. For this guest appearance, he personally visited traditional Taiwanese markets to research the diversity of seafood and vegetables that differ due to Taiwan's unique climate. He aims to use local ingredients to provide a distinctive dining experience for Taiwanese guests through the lens of contemporary Korean culinary art.

The menu designed for this guest event will heavily incorporate local Taiwanese produce, including ingredients like Taiwanese baby corn, mountain vegetables, eel, and Yunlin cabbage, offering dishes that resonate with Taiwan's seasonal flavors. Additionally, Chef Allen will introduce a representative traditional Korean rural dish known as “acorn noodles,” alongside his signature dishes like charcoal-grilled eel and charcoal-grilled beef short ribs, allowing Taiwanese diners to experience unique flavors from different cultural backgrounds.

One of Restaurant Allen's signature dishes, “Pan-Seared Lamb Loin with Local Grains and Spring Vegetables,” vividly reflects the beauty and flavors of the four seasons in Korea. Chef Allen brings with him extensive experience, having worked in top Michelin-starred restaurants such as Eleven Madison Park, Per Se, and Daniel, sharpening his expertise in French cuisine.

Since its inception, Restaurant Allen has gained prominence in the high-end dining scene in Korea, consistently earning two Michelin stars. After nearly 20 years in the United States, Chef Allen returned home to establish his French modern restaurant “L’Impression,” promptly receiving a two-star Michelin rating in its opening year. Similarly, Restaurant Allen received its first star in its inaugural year, followed by two consecutive years of two stars, and has received accolades such as “Best of Seoul” and rankings among the world’s top 1,000 restaurants.

During the July guest event, Chef Allen will provide an unforgettable dining experience at the BeGood restaurant in Han Gyu Hotel. His culinary philosophy emphasizes that “the best dishes start with the best ingredients, and the best ingredients are seasonal, local products.” This belief allows guests to truly feel the rhythms of the changing seasons with every dining experience.
